Börek with Potatoes, Speck, and Smoked Scamorza

The Börek with Potatoes, Speck, and Smoked Scamorza is a quick savory pie to prepare for a dinner if you have unexpected guests, just have a few ingredients to bring to the table a really tasty rustic dish!

We started getting to know Börek when we got hooked on Turkish TV series :-D, where we see this dish being served both as a meal and as a savory breakfast option.

My first Börek was made with minced meat with a sautéed onion, and once presented at the table, it was a great success with the family, to the point of making it again in a customized version.

Below, you will find the recipe for the classic meat Börek rolled as per Turkish tradition, and other recipes with phyllo dough that you can buy ready-made, or if you want to make it at home, I’ll leave the recipe here.

The Börek with Potatoes, Speck, and Smoked Scamorza is perfect for a tasty and original appetizer. Simply cut it into small portions after letting it cool to achieve an optimal cut without ruining the flakiness.

Börek with Potatoes, Speck, and Smoked Scamorza

Ingredients

  • 10 sheets of phyllo dough
  • 2 cups of cleaned potatoes
  • 7 oz of speck cut into sticks
  • 5 oz of smoked scamorza
  • to taste of salt
  • to taste of oregano
  • to taste of extra virgin olive oil
  • to taste of chia seeds

Steps

  • First, peel the potatoes and place them in a pot with water to cook them. Meanwhile, grate the smoked scamorza julienne style.

  • When the potatoes are cooked, let them cool, then cut them into small cubes.

  • Season them with a bit of extra virgin olive oil, oregano, and salt. Mix.

  • Line the baking tray with parchment paper.
    Brush it with extra virgin olive oil.

  • Start forming the base with phyllo sheets, brushing each layer with oil as you place the next sheet on top.
    Form a base with 10 overlapping sheets; the remaining will be used for the cover.

  • Stuff the base first with the potato cubes, then with the speck, and finally with the smoked scamorza.

  • Prepare the cover using 3 sheets by 2 if you want to create the ruffling, otherwise, overlay them all like the base.

  • Brush with oil and sprinkle with chia seeds.
    Bake in a preheated oven at 340°F for about 15-20 minutes.

The Börek with Potatoes, Speck, and Smoked Scamorza is great to enjoy either hot or cold, perfect for your outings with friends.

If you prefer to simplify the work, you can make the cover smooth without ruffling like the underlying base, the taste will not change 🙂
