Chicken Breast Pizzaiola

The chicken breast pizzaiola is a flavorful and juicy main dish where you can mop up the fresh tomato sauce; the meat is first dusted with rice flour, dipped in egg and then browned in a skillet.

Ingredients

  • 5.3 oz chicken breast slices (about 150 g)
  • 1 egg
  • 3 tbsp grated Grana
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic
  • to taste rice flour
  • to taste salt
  • to taste basil

Steps

  • In a small skillet pour 1 tbsp of extra virgin olive oil and 1 clove of garlic, add the tomatoes cut into small pieces.

  • Add salt, pepper and basil.

  • Cook for about ten minutes, adding a little water if necessary. The sauce should not be too thick.

  • After preparing the sauce, move on to the chicken preparation.
    Season the meat with salt, dust it with rice flour and then dip it in the beaten egg.

  • Place another skillet on the heat with the remaining 1 tbsp of extra virgin olive oil.
    Brown the meat on both sides.

  • In a small ovenproof dish pour half of the sauce and lay the meat on top.

  • Cover with the remaining sauce and sprinkle the grated Grana on top.
    Bake at 428°F for about 15-20 minutes to brown the top.
