Cocoa Pancakes

Ideal for a Sunday morning breakfast when everyone is at home, prepare them in the morning upon waking up and enjoy them in complete tranquility with the whole family; a sweet treat for your palate.

With the cocoa pancakes, you’ll start the day in the best way, an inviting breakfast that no one at home will want to miss!

You can fill them in various ways: to make them even more delicious, with hazelnut cream, or with red fruits and a sprinkling of powdered sugar; in my case, I preferred a light filling with low-fat yogurt and a layer of kumquat mandarin marmalade I made at home.

Ingredients

  • 1 cup all-purpose flour
  • 2/3 cup low-fat milk
  • 1/4 cup powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 1 egg
  • 1 tsp baking powder

Steps

  • In a bowl, pour the dry ingredients: flour, cocoa, baking powder, and mix.

  • In another bowl, pour the egg and sugar, mix with a hand whisk.

  • Add the milk, mix, and then pour the dry ingredients a little at a time.

  • Heat the small pan over moderate heat and pour two tablespoons of batter, cook on both sides.

  • With this amount, you will get 6 pancakes, ready to be filled as you like.
