Ingredients
- 1/3 cup precooked couscous
- 1 cup cleaned pumpkin
- 1 fresh scallion
- 2.5 oz fresh cheese
- 1 tbsp extra virgin olive oil
- 1 sprig parsley
- to taste salt
- to taste white pepper
Steps
Clean the pumpkin by removing the skin and seeds, and cut it into small cubes.
Clean the scallion and slice it.
In a pan, pour the tablespoon of oil and the scallion, let it fry gently for a minute, then add the pumpkin and a glass of water.
Season with salt, pepper, and chopped parsley, stir, and let it cook for about 10 minutes.
Prepare the couscous by covering it with a glass of boiling water.
