Ingredients

  • 6 Argentinian shrimp
  • 1 egg
  • 3/4 oz corn flakes
  • to taste salt
  • to taste garlic powder
  • to taste flour
  • to taste extra virgin olive oil
  • 2 bunches arugula
  • 1 lemon
  • 1 tablespoon extra virgin olive oil
  • to taste Parmesan shavings

Steps

  • Clean the jumbo shrimp by removing the intestinal thread with a toothpick and the carapace (the outer shell), leaving the tail end. Season with salt and garlic powder.

  • Coat the shrimp first in flour, then in beaten egg, and finally in crushed corn flakes.

  • With a brush, coat a baking dish with extra virgin olive oil and place the stuffed shrimp inside. Spray some oil on top as well.

  • Set the temperature to 356°F and cook for 15 minutes in the air fryer.

  • Meanwhile, prepare the side dish by adding a tablespoon of oil and a pinch of salt to the arugula.

  • Grate the zest of an organic lemon and add a few drops of lemon juice. Mix and transfer the arugula to the serving plate. Finish with Parmesan shavings, and when the shrimp are ready, serve them on the bed of arugula.
