Ingredients
- 9 oz cleaned fennel
- 1 orange (4 oz)
- 3.5 oz fresh cheese
- 6 taggiasca olives
- to taste salt
- to taste extra virgin olive oil
- to taste pine nuts
Steps
Wash and clean the fennel from hard parts and fronds, setting aside a bit.
Cut the fennel into quarters and slice thinly.
Peel the orange and cut it into slices, then divide into 4 wedges.
Continue by cutting the fresh cheese into cubes.
Combine the ingredients in a bowl, adding some finely chopped fennel fronds.
Add the olives and pine nuts, season with salt and extra virgin olive oil.
