Five-grain Polenta Crostini with Bacon

The five-grain polenta crostini with bacon are a tasty and unique idea for preparing polenta.

Ideal to serve as an appetizer at your special occasions or as a cocktail party snack with your friends.

The five-grain polenta crostini with crispy bacon and a drizzle of truffle sauce, a perfect flavor combination.

The idea came to me when I bought truffle sauce at Lidl; I love the taste of truffle and when I bought it, I was thinking of how best to use it, and I must say that my family and I really liked this recipe!

If you don’t find truffle cream, you can opt for cheese like crescenza or Philadelphia.

To make the five-grain polenta crostini with bacon, you just need to use instant polenta and not cornmeal.

Once prepared, pour it into a rectangular pan to shape and cool it, even better if you prepare it the day before and keep it in the fridge like I did.

Then you just need to shape it by cutting into squares and then grill them, obtaining a crispy and golden crust, fill them and serve. Easy, right?

Ingredients

  • 1 cup five-grain Valsugana polenta
  • 3 1/3 cups water
  • 5.3 oz bacon
  • 5.3 oz truffle sauce
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • Pour the water into a pot, add some salt, and put it on the stove.

  • When it comes to a boil, sprinkle in the polenta.

  • Stir frequently with a whisk to prevent lumps, cook for the time indicated on the package.

  • At the end of cooking, you will have a nice firm polenta.

  • Pour the polenta into a rectangular pan and spread evenly.
    Let it cool and then store in the fridge for at least 3 hours.

  • Cut the bacon into strips and when you are ready to prepare the crostini, brown the bacon in a non-stick pan without oil for a crispy result.

  • Cut the polenta into squares and place them on a hot grill.

  • Grill both sides.
    Pour a tablespoon of truffle sauce and some crispy bacon pieces on top of the sauce.

The five-grain polenta crostini with bacon can be a great anti-waste idea to use up leftover polenta from the day before.
