In my recipe, I used cherry tomatoes, some arugula, corn, and Tropea onion, which for us Calabrians is the star ingredient in summer dishes.
The fresh squid rings salad is perfect for a lunch break at work, just prepare it the day before and store it in the fridge so that all the ingredients blend together, resulting in a tasty and flavorful dish.

Ingredients
- 14 oz of fresh or frozen squid rings
- 2 cups of cherry tomatoes
- 1/2 cup of corn
- 1 cup of arugula
- 1 fresh Tropea onion
- to taste of salt
- to taste of extra virgin olive oil
Steps
Place a pot of water on the stove and bring it to a boil.
Add the squid rings to the boiling water.
Boil for 10 minutes.
Drain and let cool.
In a bowl, cut the cherry tomatoes into quarters after washing them.
Clean and slice the onion into the tomatoes.
Finish by adding the corn, arugula, and cooled squid rings.
Season with salt, extra virgin olive oil, and give it a good stir before placing it in the fridge.
The fresh squid rings salad is easy to prepare with either fresh or frozen fish, just defrost it before preparation.
