Fusilli with Flower Pesto, Anchovies, and Mozzarella

The fusilli with flower pesto, anchovies, and mozzarella is a rich and hearty first course that will make you lick your lips!

After preparing my supply of flower pesto and storing it in the freezer, I thought about how I could create a first course and was inspired by the classic recipe of battered and stuffed zucchini flowers with mozzarella and anchovies.

I must say that the experiment worked well and was appreciated by the family.

Ingredients

  • 2.8 oz fusilli
  • 3 fillets anchovies in oil
  • 2.5 oz flower pesto
  • 1.8 oz mozzarella
  • to taste salt
  • to taste extra virgin olive oil

Steps

  • After preparing the pesto according to the recipe instructions, you can put the pot on the stove to boil water and prepare the sauce with anchovies.
    Pour some extra virgin olive oil into the pan, and add the anchovy fillets.
    Let them melt for 1 minute.

  • When the pasta is cooked, season it with the flower pesto, sauté it for a couple of minutes on the fire.
    Turn off the heat and add the oil with the fillets and the mozzarella cubes, stir to melt the mozzarella.
