Ingredients

  • 2 1/2 cups of oat flakes
  • 1 ripe banana
  • 2 eggs
  • 1 cup of coconut and rice plant-based beverage
  • 1/4 cup of erythritol
  • 1/4 cup of unsweetened cocoa powder
  • 1 1/2 tsp of baking powder
  • 2.8 oz of 75% dark chocolate
  • as needed of coconut flour

Steps

  • To prepare the cake, you need a ripe banana.
    Peel it, slice it, and mash it with a fork.

  • In a bowl, add the cracked eggs, baking powder, and erythritol, and beat with a mixer for a few minutes.

  • Then add the banana pulp, plant-based beverage, and sifted unsweetened cocoa.

  • Mix all the ingredients well with the mixer.
    Finish by adding the oat flakes.
    Pour into an 18 cm (7-inch) diameter springform pan, greased and floured.
    Place in a preheated oven at 356°F for about 30 minutes.
    Once cooked, remove from the oven and let it cool.

  • Prepare the glaze by breaking the dark chocolate into pieces in a bowl and adding a small cup of water.
    Melt in a bain-marie or microwave for a few seconds.
    The chocolate should be smooth and fluid.
    Pour the glaze over the cake, let it cool slightly, and then sprinkle with coconut flour.
