With the arrival of the warm season, we crave light and fresh dinners, so I suggest you prepare homemade multigrain frese.
Once you’ve prepared the multigrain frese, you can fill them to your taste. I made a delicious and simple topping with fresh cherry tomatoes diced, Taggiasca olives, and mozzarella cubes, all seasoned with oil, salt, and oregano.
The multigrain frese are also great as a side for your meat or fish meals, as a substitute for traditional bread, and even for a good and healthy breakfast with a layer of fresh cheese and jam or for a savory breakfast with scrambled eggs.
They are surely more genuine and healthier than industrial products like rusks, all of this I am learning by following social groups that guide you towards a healthy and balanced diet.
In my multigrain frese recipe, I used sourdough, but you can use 10 g of fresh yeast. If you want to learn how to make sourdough, just follow my instructions here; it requires time and consistency to last for years!

Ingredients
- 1.2 cups of multigrain flour
- 1/2 cup of water
- 3.5 tbsps of extra virgin olive oil
- 3.5 oz of sourdough
- 3.5 tbsps of water for sourdough
- 1 tsp of sugar
- 2 tsp of salt
Steps
In a bowl, pour the multigrain flour, salt, and oil.
Add the teaspoon of sugar and water.
Start kneading with a wooden spoon, then add the sourdough dissolved with the prescribed water, continue kneading first in the bowl, then on a floured surface.
Divide into 4 portions forming an oval shape, let them rise on a baking sheet lined with parchment paper for 3-4 hours in the oven with the light on.
Once they have risen, bake at 350°F for 20 minutes, then remove and let cool.
Cut in half and return to the oven for a second bake, again at 350°F for 20 minutes.
They should be beautifully golden.
The golden multigrain frese, crispy and delicious even on their own, with every bite you will taste the seeds under your teeth. I don’t know about you, but I love seeds 😛
