The paprika eggplant sticks are a delicious and tasty side dish with a spicy flavor, also ideal as a tempting appetizer.
A very simple preparation to enjoy carefree, because they are not fried in abundant oil, but with little seasoning in an air fryer, achieving the same result with few calories, which is not a small thing!
The paprika eggplant sticks are sweet in my recipe, but you can also use the spicy one or simply omit it if you do not like spicy flavors.
For the recipe, I used striped eggplants, I find them more tender, sweet, and flavorful, just cut them into sticks, season them with salt, and flour them before cooking.

What you need for paprika eggplant sticks
- 1.1 lbs striped eggplants
- 6 tablespoons of EVO oil
- to taste flour
- to taste salt
- to taste white pepper
- to taste sweet or hot paprika

Steps
Wash the eggplant and remove the stem.
Cut it into slices about half an inch thick.
Cut the slices into sticks.
Season the sticks with some salt and a little pepper.
In a bowl, pour some flour and sprinkle with paprika, then mix.
Coat the eggplant sticks with flour.
Place the sticks spaced apart in the air fryer basket.
If they do not all fit, cook them in two batches.
Drizzle the tablespoons of EVO oil to season.
Cook at 356°F for 15 minutes, during cooking, open and turn the sticks to achieve even browning.
