The paradise cake with blueberries is my idea combining the classic recipe of paradise cake with the addition of blueberries and alchermes to give a touch of color.
The experiment gave excellent results both visually and in taste, the paradise cake with blueberries, a cloud that melts in your mouth! exquisite and enveloping that will leave you satisfied.
Paradise cake is a typical recipe from the Pavia cuisine, its creation dates back to the 1800s, and its name came from the expression of a noblewoman when she tasted it: “This cake is a paradise!” and so, the pastry chef who made it, named his creation paradise cake.
A simple dessert with an extremely soft texture that can be enjoyed naturally with a dusting of powdered sugar on top, or make it even more heavenly with a cream filling.
In this version, I thought of adding blueberries to make it more genuine, reminiscent of home and good things.

Ingredients
- 1 3/4 cups of all-purpose flour
- 3/4 cup of potato starch
- 2/3 cup of butter
- 1 cup of powdered sugar
- 2 whole eggs
- 3 egg yolks
- 1 packet of vanillin
- 3/4 cup of blueberries
- 6 tablespoons of alchermes
- as needed of powdered sugar

Steps
For an optimal result of the cake, take the butter out of the fridge to soften at least 2 hours before.
Add powdered sugar to the cubed butter and work with whisks for 5 minutes.
Add whole eggs and mix, continue with the addition of the yolks.
Complete the mixture by adding the flour mixed with potato starch, baking powder, and a packet of vanillin.
The dough should be nice and thick.
Butter and flour the mold.
I used a 24 cm diameter springform pan.
Incorporate half of the batter into the mold, pour 3 tablespoons of alchermes and half of the blueberries.
Cover with the remaining batter and finish with the addition of the remaining blueberries and 3 tablespoons of alchermes.
Bake at 350°F for about 40 minutes, the baking time varies depending on the oven, so before turning it off, do the toothpick test to check if it is perfectly cooked.
Remove from the mold and when completely cooled, dust with powdered sugar.
The paradise cake with blueberries is great for breakfast for the whole family, a wholesome snack for your children.
