For this recipe, I used Valsugana Taragna polenta, a mix of wholemeal flour and buckwheat, but you can use whichever you prefer.

Ingredients
- 4.6 oz of Valsugana Taragna polenta
- 3 cups of water
- 3.5 oz of pecorino romano
- to taste of salt
- to taste of sweet paprika
- 3 eggs
- to taste of breadcrumbs
Steps
In a pot, pour the water and salt and place it on the stovetop. Once it boils, gradually add the flour and pecorino.
Stir immediately to avoid lumps, sprinkle generously with paprika, and cook for the indicated time, stirring occasionally.
Once cooked, pour it into a rectangular baking tray, spread it evenly, and let it cool.
Refrigerate for at least 3 hours.
Take the polenta and cut it into strips about 0.8 inches wide and then into sticks 1.5-2 inches long.
In a bowl, beat the eggs with a pinch of salt and dip the polenta sticks, then coat them in breadcrumbs.
Cover the baking sheet with parchment paper and drizzle with a little EVO oil.
Place the breaded sticks on top, and before baking, drizzle with more oil.
Bake at 428°F for 20 minutes.
