Ingredients
- 1 sheet rectangular puff pastry
- 1 egg yolk
- 1/4 cup granulated sugar
- 3 tbsp all-purpose flour
- 1 cup milk
- 1 2/3 cup raspberries (fresh)
- 1 egg
- lemon extract
- as needed powdered sugar
Steps
Start with the puff pastry: place it vertically, cut it in half and obtain 6 rectangles.
On each rectangle, use a knife with a smooth blade to cut a frame of about 5/8 in.
Lift one corner of the frame and fold it over the other, then lift and cross the opposite corner.
Brush the rectangles with the egg yolk and bake at 356°F for about 20 minutes.
Move on to preparing the pastry cream by whisking the sugar with the egg directly in a small saucepan.
Add the flour while continuing to mix.
Incorporate the milk and place the pan on the lit stovetop.
Add a little lemon extract, stir continuously and bring to a boil.
Keep over the heat until the cream thickens.
Turn off the heat and let it cool.
When the cream has cooled, you can decorate the treats.
Put the cream into a disposable piping bag without a tip and fill each pastry.
