Ingredients

  • 2 2/3 cups all-purpose flour
  • 3/4 cup water
  • 2 tbsp extra virgin olive oil
  • 2 tsp salt
  • 1 3/4 tsp active dry yeast
  • 10 1/2 oz boiled spinach
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • to taste salt
  • to taste pepper
  • to taste garlic powder
  • to taste extra virgin olive oil

Steps

  • In a bowl, pour the flour, the oil, dissolve the yeast in water and start kneading, add the salt.

    Continue kneading until you get a firm and smooth dough, cover with plastic wrap and let it rise for a couple of hours in the oven with the light on.

  • Sauté the spinach in a pan with a dash of extra virgin olive oil, a pinch of salt, and a bit of garlic powder. Let it flavor and turn off.

  • Cut the spinach with scissors.

  • In a bowl, incorporate the ricotta and mash with a fork, add the Parmesan.

  • Pour in the beaten egg, mix and add the spinach.

  • Finish with a pinch of white pepper.

  • Line the bottom of the round pan (diam 10 inches) with baking paper

  • Divide the dough into two parts and roll it out with a rolling pin.

  • Place the dough disc in the pan.

  • Pierce the dough with a fork.

  • Pour the ricotta and spinach mixture inside.

  • Cover with the other dough disc and close the edges.

  • Finish by sealing the edge with a fork and pierce before baking at 356°F for 30/35 minutes.
