Savory Tart with Zucchini Cream and Salmon

The savory tart with zucchini cream and salmon is a tasty and flavorful dish to serve as an appetizer in small portions, for dinner, or at savory buffets.

My savory tart with zucchini cream and salmon doesn’t have a shortcrust pastry base, but it’s a soft leavened dough. The zucchini filling is prepared by me in advance and then frozen, a great method to save time.

With this method, you just need to take it out of the freezer in the morning before going to work, and in the afternoon you prepare the dough to then make the tart for dinner.

Ingredients

  • 3 cups all-purpose flour
  • 0.85 cups milk
  • 2 tbsps extra virgin olive oil
  • 1 egg
  • 2 tsp salt
  • 1 tsp fresh yeast
  • 14 oz zucchini cream
  • 5 oz smoked salmon
  • as needed milk

Tools

  • Mold springform pan 10 inches

Steps

  • In a bowl, pour the flour and in the center, add the egg, oil, and lukewarm milk with dissolved yeast.

  • Start mixing with a wooden spoon, add salt before fully kneading. Knead until obtaining a soft dough ball.

  • Cover with plastic wrap and let rise in the oven with the light on for 3 hours.

  • After the time has passed, butter and flour the pan. I used a 10-inch diameter springform pan.

  • Divide the dough into two parts and start rolling out with a rolling pin, place the dough disk in the pan with an edge about 1 inch high.

  • Pour and spread the zucchini cream inside, cover with smoked salmon slices.

  • With the remaining dough, cut strips about 3/4 inch wide. Braid two strips together.

  • Arrange the braids around the tart and in the center.
    Before baking, brush with a bit of milk.
    Bake at 350°F in a preheated oven for about 25-30 minutes.
