Soft Orange Cookies

The soft orange cookies are perfect for any occasion: from breakfast to an afternoon break, or a sweet night-time treat to aid sleep… I don’t know about you, but after eating something sweet before going to bed, I have happy dreams 😀

I also find them perfect to gift to a sweet-toothed friend, the soft orange cookies wrapped in a tray with transparent paper will make a great impression. A while ago, I brought them to a friend and she appreciated them a lot.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1 egg
  • juice of one organic orange
  • zest of 2 organic oranges
  • 2 tsps baking powder
  • as needed powdered sugar

  • Lemon Zester
  • Citrus Juicer
  • Hand Mixer

Steps

  • Using the zester, grate the zest of the two oranges, then squeeze the juice of just one orange and combine it with the zest.

  • In a bowl, add the sugar and softened butter, mix with the beaters.
    Add the egg and mix again, then add the orange zest and juice.

  • Add the flour and start kneading with your hands until you get a soft and sticky dough.
    Wrap in cling film and let it rest in the freezer for 30/40 minutes.

  • Take the dough and start forming balls that you will place on the baking sheet lined with parchment paper.
    Once you’ve finished forming the balls, put them back in the fridge for an hour.

  • After the resting time, preheat the oven to 340°F and in the meantime, roll the balls in powdered sugar.
    Bake for 20 minutes.

When you take out your soft orange cookies, the intense and intoxicating citrus aroma will captivate you at the first bite 😛
