Ingredients

  • 3 oz spaghetti
  • 1/2 avocado ripe avocado
  • 2 oz datterino (datterino-style) tomatoes
  • 1 tbsp pine nuts
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic
  • 1 tbsp breadcrumbs
  • to taste salt

Steps

  • Wash the datterino tomatoes and cut them in half.

    Peel and dice the avocado into small pieces.

  • Place a pan on the stovetop with a tablespoon of oil, a clove of garlic and the pine nuts.
    Lightly toast until golden, then add the datterino tomatoes and the avocado.

  • Season with salt and cook over low heat for about ten minutes; if the sauce becomes too dry, add a splash of the pasta cooking water.

  • When the pasta is cooked, add it to the pan with the sauce, sprinkle the breadcrumbs, toss everything together and plate.
