The spaghetti with friggitelli, sausage, and smoked ricotta is a rich and flavorful white first course.
The stars are the friggitelli peppers, small tender sweet green peppers that cook quickly.
With the peppers, I combined the sausage, and once completed, instead of using parmesan, I added a generous grating of smoked ricotta.

Ingredients
- 6.35 oz spaghetti
- 1.47 cups friggitelli
- 8.82 oz white sausage
- 1 glass white wine
- to taste extra virgin olive oil
- to taste salt
- to taste smoked ricotta
Steps
Wash the friggitelli and dry them well.
Place a pan on the stove, pour in some extra virgin olive oil, and heat it up.
Lay the whole friggitelli into the hot oil and cook them for a few minutes, turning them often.
Once fried, place them on a plate and season with salt.
After they have cooled down, remove the stalk and seeds, and cut them into strips with kitchen scissors.
Let’s move on to preparing the sausage, removing the casing and crumbling it with your hands.
Put some extra virgin olive oil in another pan and add the crumbled sausage, let it brown for 5 minutes, using a fork to break it up into small pieces, stirring often.
Add the glass of white wine and continue cooking for another 10 minutes over low heat.
A few minutes before the end of cooking, add the friggitelli.
The sauce is ready, all that’s left is to cook the spaghetti.
Toss the spaghetti in the sauce pan, adding a ladle of the pasta cooking water.
Before serving, give a generous grating of smoked ricotta.
