Ingredients
- 5 eggs
- 4.2 oz sugar
- 3.5 oz flour
- vanilla flavor
- 12.3 oz mascarpone
- 12.3 sweetened vegetable cream
- 8.8 oz strawberries
- 3 strawberries for decoration
- 4 macarons
- 1/3 cup alchermes
- lemon juice
- 1 tbsp sugar
- 1 pinch salt

Steps
Let’s start by washing and chopping the strawberries into small pieces, add lemon juice and the tablespoon of sugar.
Mix and keep in the fridge.
Whip the cream for desserts, I use the vegetable one because it maintains its compactness, make sure it’s very cold before whipping.
Add the mascarpone and mix with the electric whisks.
Store in the fridge.
Let’s move on to preparing the sponge cake, cracking the eggs into two separate bowls, put the yolks in one and the whites in the other.
Whip the whites to stiff peaks first with a pinch of salt and then the yolks with the sugar.
Combine the two ingredients and mix.
Add the flour and vanilla flavor.
Line the baking sheet with parchment paper, pour the mixture and spread it evenly across the surface.
Bake at 392°F (200°C) and cook for 5-6 minutes, no more!
Remove from the oven and cover with another parchment paper, flip over and gently pull off the parchment.
Trim the edges to obtain a rectangle, measure the length with a measuring tape and divide into three equal parts.
Start assembling our dessert by brushing with alchermes and then filling with mascarpone cream.
Pour half of the chopped strawberries on top, cover with the other sponge cake base proceeding in the same way.
The last layer was filled with a star nozzle.
