Stuffed Belgian Endive in Air Fryer

Ingredients

  • 2 Belgian endive
  • 9 oz of lean veal mince
  • 1.75 oz of breadcrumbs
  • 1 egg
  • 2 tbsps of grated Parmesan cheese
  • organic lemon zest
  • to taste of salt
  • to taste of marjoram
  • to taste of thyme
  • to taste of garlic powder
  • to taste of breadcrumbs
  • 4 tbsps of EVO oil

Steps

  • In a bowl, pour in the lean veal mince, breadcrumbs, egg, and grated Parmesan cheese.
    Season with salt and garlic powder.

  • Add a sprinkle of thyme and marjoram.
    Grate the zest of an organic lemon, mix everything together.

  • Clean the endive by removing the outer leaves, wash and cut in half, remove the hard inner part and season with a bit of salt.
    Fill the halves with the prepared mixture.

  • Pour 2 tablespoons of EVO oil on the bottom of the silicone container and place the stuffed endive inside.
    Sprinkle with a bit of breadcrumbs and season with the other 2 tablespoons of EVO oil.
    Place the container in the air fryer basket and set the cooking at 356°F (180°C) for 20 minutes.
