Instead of frying them in the traditional way, I preferred air-frying for a healthier result with little oil, without altering the flavor.
A versatile and appetizing recipe for preparing artichokes, easier than you might think: the artichokes are lightly blanched, stuffed, then passed in flour, egg and breadcrumbs.
The filling consists of a potato purée with diced cooked ham and a piece of brie cheese, but you can use your imagination according to personal tastes.

Ingredients
- 8 artichokes
- 1 cup boiled potatoes (about 200 g / 7 oz), mashed
- 2 oz diced cooked ham (about 50 g)
- 3.5 oz brie cheese (about 100 g)
- 3 eggs
- 3 tbsp grated Parmesan
- 1 cup milk
- 2 tsp butter (about 10 g)

Steps
Clean the artichokes by removing the stem and the tough outer leaves, then cut them in half.
Place the artichokes in a pot with water and blanch them for 5 minutes.
Drain them and let them cool.
In a pan, place the butter and the mashed potatoes, pour in the milk and the grated Parmesan, then turn on the stove.
Season with salt and stir with a spatula until the potatoes absorb the butter and milk, add the small cubes of cooked ham, mix and turn off the heat.
Begin stuffing the two halves of each artichoke with the potato mixture and, before joining them, add a small piece of brie.
Join the two halves by pressing them together with your hands so they adhere well, then dredge the artichoke first in flour, then in beaten egg, and finally in breadcrumbs.
Line the air-fryer basket with paper designed for air-fryer cooking and brush with extra virgin olive oil (EVOO).
Place the artichokes in the basket and brush them with oil.
Set the cooking temperature to 356°F for 20 minutes; halfway through, turn the artichokes for even cooking.
