Swordfish with Caramelized Onions

Ingredients

  • 2 steaks of swordfish
  • 10.5 oz of Tropea onions
  • 3 tablespoons of sugar
  • 1 glass of red wine
  • to taste of salt
  • to taste of garlic powder
  • to taste of extra virgin olive oil

Steps

  • Peel the onions and cut them into rings that are not too thin.

  • Put the onions in a pan with a drizzle of extra virgin olive oil, adding the 3 tablespoons of sugar.

  • Cook over high heat, allowing the sugar to dissolve for about 5 minutes, stirring often.

  • Add the glass of wine and a bit of salt, cook for about 15 minutes until glazed.

  • After preparing the onions, proceed to the swordfish.
    Season the fish slices with salt, garlic powder, and extra virgin olive oil.

  • Heat the grill and place the slices to cook, grilling on both sides.
    Plate and top with caramelized onions.
