I chose pecorino because it has a stronger flavor, but if you prefer, you can replace it with parmesan or grana.

Ingredients
- 2.2 lbs red peppers
- 2 3/4 cups breadcrumbs
- 2 cups grated pecorino cheese
- 6 fillets anchovies in oil
- 1/4 cup pine nuts
- to taste salt
- to taste garlic powder
- to taste chives
- to taste marjoram
- to taste extra virgin olive oil
Steps
Wash the peppers and place them on the oven rack to roast.
Once roasted, let them cool before peeling.
Clean them from the stem and seeds, divide each pepper into three strips.
Season the portions with salt and garlic powder.
For the filling, mix the breadcrumbs with the pecorino, pine nuts, and chopped anchovies.
Add chives and marjoram, and give it a stir.
Brush a baking dish with some extra virgin olive oil.
Start filling the peppers by spreading a layer of the breadcrumb mixture.
Roll up and arrange the rolls in the baking dish.
Pour the remaining breadcrumb mixture over the rolls and drizzle with a bit of oil before baking.
Bake at 392°F for about 20 minutes, until golden.
