Zucchini Rolls

Zucchini Rolls

Ingredients

  • 2 large zucchinis
  • 2 cans of tuna in oil (2.8 oz each)
  • 1/3 cup of bread crumbs
  • 1/4 cup of grated Parmesan cheese
  • 1 egg
  • to taste white pepper
  • to taste garlic
  • to taste extra virgin olive oil
  • to taste bread crumbs

Steps

  • Wash the zucchinis and remove the first slice, then cut into slices about half an inch thick.
    Season the slices with salt.

  • Line a baking sheet with parchment paper and brush it with extra virgin olive oil.
    Place the slices on top and brush them with extra virgin olive oil.
    Bake at 428°F for 15 minutes.

  • In the meantime, prepare the filling by pouring the drained tuna into a bowl, add the bread crumbs.

  • Incorporate the Parmesan cheese, the egg, and season with pepper and garlic.
    I use garlic essence spray or powdered garlic. Mix.

  • With the dough, form small oval meatballs.

  • When the zucchini slices are cooked and cooled, start wrapping the little meatballs in the slices.
    Secure each roll with a toothpick.

  • Place the rolls in a baking dish and sprinkle over the bread crumbs.
    Bake at 428°F for another 10 minutes or so.

Zucchini rolls will be appealing even to children who don’t like vegetables, you’ll see they’ll eat them and ask you to make them again!
