Apple and Hazelnut Air Fryer Muffins

These apple and hazelnut muffins for the air fryer are really simple. They’re made with very few ingredients and are ideal for breakfast or a snack.

They are apple muffins, but served in small ceramic ramekins.

All you need are good apples — I have a soft spot for Renette apples — an egg and 0% fat Greek yogurt. You can also use a good soy yogurt.

I don’t add sugar because the apples are already sweet. How long do they take? About twenty minutes in the air fryer or oven.

Ingredients for Apple and Hazelnut Muffins

  • 2 apples
  • 1 egg
  • 3 oz Greek yogurt (0% fat) (about 1/3 cup) (or soy yogurt)
  • 2 tbsp hazelnuts (chopped)

  • 3 Ramekins

Steps for Apple and Hazelnut Muffins

  • Simply peel the apples and grate them with a coarse grater into a bowl. Beat the egg with a fork and pour it over the apples, mixing, then add the Greek yogurt and the chopped hazelnuts. Mix everything together and pour into the ramekins just brushed with oil and dusted with flour.

    Warm your air fryer for one minute, place the ramekins inside, and set to 338°F for 20 minutes.

    Remove, let cool slightly and serve for a snack or breakfast.

    Alternatively, bake in the oven for 20 minutes at 356°F.

    Apple cakes in air fryer

Apple and almond muffins keep for a couple of days in the refrigerator when well covered. You can omit the egg and add 30 g (about 2 tbsp) of yogurt instead. Add flax and sunflower seeds instead of hazelnuts. Pour melted chocolate over the muffins before serving, or accompany them with vanilla ice cream.
