Artichokes with Hazelnuts in the Pressure Cooker

Simple and delicate, Artichokes with Hazelnuts in the pressure cooker, ready in ten minutes. Today I was short on time again and if there’s a vegetable I’m mad about, it’s artichokes.

I could manage to eat artichokes only for days, everyone has their quirks…

It’s certainly not the most economical vegetable, at least here in Veneto artichokes cost quite a bit, so I try to use every part of the artichoke.

With the leaves I make a velouté, with the stems risottos, and the precious artichoke base I prepare “in tecia” like my mother used to make.

Today I didn’t have the time so I used the pressure cooker, 7 minutes from the whistle (in my Fissler) and I put it on the table.

Artichokes with hazelnuts

Ingredients

  • 5 artichokes
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon parsley
  • 1/2 cup vegetable broth
  • 2 tablespoons hazelnuts (coarsely chopped)
  • to taste sea salt
  • 1/2 lemon
  • 1 pinch garlic powder

  • 1 Pressure cooker Fissler Vitavit

Steps

  • First of all you need to clean the artichokes. Wash and prepare the little cups — remove the inner fuzzy choke — and place them to soak in water with lemon.

    Also cut and peel the stems into short pieces. Put everything in water and lemon for 10 minutes.

    Pour one tablespoon of oil into the pressure cooker, place the artichokes and stems. In the little cups sprinkle chopped parsley, hazelnuts and the garlic.

    Add the vegetable broth, a pinch of salt and close the cooker tightly.

    From the whistle (on the Fissler, when you see the green circle rise) count 7 minutes, then it depends on the type of pressure cooker.

    Quickly vent the cooker, even under a stream of cold water, open and check the cooking. Adjust the salt and serve.

Tips

You can also prepare the artichokes in a pan, checking often that they don’t dry out too much; you can cook them with some potatoes or Jerusalem artichokes.
