A delicious and ultra-simple side dish, this baked Romanesco cabbage casserole. Call it Romanesco broccoli flan or Romanesco cabbage pie, as you prefer. I know it’s well-loved at home, so even with the simplicity of the recipe and photos, I decided to publish it.

Every time I buy it, I’m amazed by the beauty of its fluorescent green pyramids. Beautiful, delicious, cooks quickly, has a very delicate flavor, and like all crucifers or brassicas, besides its many properties, it contains the famous sulforaphane.

Ingredients for Baked Romanesco Cabbage Casserole

  • 1 Romanesco broccoli
  • 7 oz robiola cheese (goat)
  • 1.8 oz Parmigiano Reggiano DOP
  • 1 tablespoon herbs
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon (zest)
  • 1 pinch sea salt
  • 1 pinch chili powder
  • 3 tablespoons breadcrumbs

How to Make the Baked Romanesco Cabbage Casserole

  • Remove the green leaves from the Romanesco broccoli (don’t throw them away, you can make a sauce). Detach the pyramids and if they are large, divide them. Wash everything thoroughly.

    Place in a steamer and cook for 10-15 minutes (depending on the freshness of the vegetable) until tender but not mushy. Transfer to a bowl.

  • In the bowl with the cabbage, add the creamy robiola, the herbs, grated lemon zest, a pinch of salt, chili, and grated Parmesan. Mix gently.

    Oil the baking dish, pour in the cabbage, sprinkle with breadcrumbs, and bake for 20 minutes until golden.

Of course, you can make this dish vegan by using crumbled vegan feta instead of robiola and maybe flavor with turmeric or other spices.
