An ideal comfort food for winter is cream apples with cinnamon flowers, filled with cream made from amaranth flour, which is also gluten-free.
When you think of the scent of cinnamon, you think of winter, a good strudel or herbal tea or hot chocolate with the addition of this special spice.
My friends with whom I run the column Herbs and Flowers on the Plate have introduced me to cinnamon flowers these days.
A wonder I didn’t know about, and we decided to introduce them to you with this month’s dedicated recipes.
Cinnamon flowers are a particular spice obtained from the fruits of the cinnamon plant.
Beautiful little flowers that should be used like powdered or stick cinnamon, but they make any dish more refined. Cinnamon flowers have a fabulous cinnamon and honey flavor with a slight orange note. I ground them in a mortar; they are perfect in desserts.
The cinnamon flowers have the same properties as cinnamon; they are rich in antioxidants with polyphenols that fight oxidative stress. Additionally, the flowers have anti-inflammatory properties due to their flavonoids, which also support joint health.
Cinnamon flowers can also help control blood glucose. Like cinnamon, the flowers are a good digestive aid, and with carminative properties, they reduce bloating. Finally, cinnamon flowers have antibacterial properties and stimulate the immune system, protecting against diseases and infections.
How did I use cinnamon flowers? First, I made myself an excellent herbal tea, putting some flowers in a tea strainer and then letting them steep for ten minutes in boiling water.
At home, they preferred hot chocolate with some cinnamon flowers, which pleasantly scented it.
I also added a few buds of cinnamon to the vegetable broth, greatly enhancing the soup.
These organic Envy apples, enjoyed as an afternoon snack on a Sunday in front of the fireplace, were so well-liked that I want to share them with you.

Ingredients for Cream-Filled Apples
- 2 apple (organic)
- 4 tablespoons amaranth flour
- 1 egg (organic)
- 1 tablespoon brown rice syrup
- 1 teaspoon carob flour
- 200 g oat beverage (organic)
- 1 pinch sea salt
- 6 cinnamon flowers
- 1 teaspoon orange zest (grated)

- 1 Air Fryer
Steps for Cream Apples and Cinnamon Flowers
Wash the apples well, remove the core, and cook them for about 15 minutes in the air fryer until they become tender. In a mortar, finely grind 3 cinnamon flowers
Meanwhile, in a small saucepan, pour 200 g of soy or oat milk, warm slightly, add 4 tablespoons of amaranth flour mixed with a teaspoon of carob flour and sifted, stir to prevent lumps, now add the powdered cinnamon flowers and a tablespoon of brown rice syrup (or rice malt). Also, add a teaspoon of orange zest.
Cook for about ten minutes on low heat until the cream thickens.
Fill the apples with cream, decorate with a few cinnamon flowers, and serve warm as a gluten-free dessert.

How to Store Cream Apples with Cinnamon Flowers
Cream-filled amaranto apples can be stored for a couple of days in an airtight container in the refrigerator.
Alternatively, you can fill the apples with dried fruits and honey like the ambrosia apples here.
With baked apples, you can make apple butter for example, or fill a strudel.
