A special one-dish meal, this easy and tasty veg poke. The healthiest option among fast food since it combines grains, proteins, raw and cooked vegetables as well as oilseeds, dried fruit, all dressed with a top sauce.
Originally it was called a poke bowl, a dish that came from Hawaii; in fact poke means to cut into cubes, because the fish was cut that way.
Here is today’s easy and tasty veg poke because instead of fish I used tempeh and buckwheat, and I added fresh steamed peas and briefly seared green asparagus.
I completed the one-dish poke with avocado, cherry tomatoes, radishes and a freshly prepared poke sauce.

Ingredients Easy and Tasty Veg Poke
- 3/8 cup buckwheat
- 2/3 cup fresh peas
- 3.5 oz green asparagus (about 6 medium spears)
- 3.5 oz tempeh
- 1/3 cup cherry tomatoes (about 6–8)
- 4 radishes
- 2 avocado
- 4 tbsp poke sauce
- 1 tbsp flax seeds
- 1 tbsp pumpkin seeds
- 1 pinch unrefined sea salt
- 2 tbsp lemon juice (juice)
- 1 oz Corno di Toro pepper (sliced)
- 1 tsp fresh ginger
- 1 sprig fresh herbs

Steps Easy and Tasty Veg Poke
Prepare the poke sauce by mixing 3 tablespoons of soy sauce with 1 tablespoon of extra virgin olive oil, the juice of half a lemon and a little fresh ginger. Mix everything and set aside.
Rinse the buckwheat and this time, instead of absorption cooking, boil it in water (we need the grains to stay separate) for about twenty minutes. Drain and set aside.
Shell the peas and steam them until tender, and sear the asparagus on a hot griddle for a few minutes. Set everything aside.
Now for the tempeh: rinse the block, pat it dry with paper towels and cut into cubes. In a small pan pour a couple (2) of tablespoons of poke sauce and sauté for a few minutes to flavor the tempeh.
Now prepare the avocados: cut in half, peel and cube them, drizzle with lemon juice and keep covered.
Wash and halve the cherry tomatoes, wash and slice the radishes.
Assemble the easy and tasty veg poke: place the buckwheat in the center of the bowl or plate, arrange peas, asparagus, radishes, avocado, cherry tomatoes and tempeh around it. Add a few slices of pepper.
Finish with flax seeds, pumpkin seeds, fresh grated ginger, 4 tablespoons of poke sauce and a few sprigs of fresh herbs.
