A really good Escarole and Ginger Soup that can be prepared in half an hour, a first course that pleases everyone.

Ingredients for Escarole and Ginger Soup
- 1 red onion
- 1 tbsp extra-virgin olive oil
- 1/2 head escarole, fresh (about 4 cups chopped)
- 1 tsp mixed herbs
- as needed vegetable broth
- 1 tsp miso
- 1 tsp fresh ginger
- 1 tbsp extra-virgin olive oil

Steps to prepare escarole and ginger soup
Wash and chop the escarole into pieces. Peel and chop the red onion, add it to the pot with one tablespoon of oil and gently sweat it.
Add the escarole, pour in vegetable broth as desired — not enough to cover, but a little less because the escarole will release a lot of water. Also add the mixed herbs.
Cover and cook over low heat for about 30 minutes.
Turn off the heat, dissolve the miso in a splash of water and add it if you like.
Serve with grated fresh ginger, a drizzle of olive oil and croutons.
Tips from Timo e Lenticchie
If you have leftovers, store them for a couple of days in the refrigerator in a well-sealed container. You can also add other vegetables to the soup. You can add a little turmeric or other spices before serving.
