Many Apples and Kefir Cake

A very simple cake, without added sugars, the many apples and kefir cake, try it, I’m sure you’ll like it!

Today I came back home from a week of vacation, unfortunately I had forgotten 5 apples in the fruit bowl. They were Reinette apples, still very good but a little bruised. So I thought of putting them all together in a cake, adding a couple of organic eggs, some raisins, and milk kefir.

It turned out as a soft but really good cake, definitely worth making again. And if you want it even richer, pour this mixture into a tart crust or puff pastry shell.

Ingredients for Many Apples and Kefir Cake

You can make the cake gluten-free by using buckwheat flour.

  • 5 Reinette apples (or golden)
  • 2 eggs (organic cat 0)
  • 2 tablespoons type 2 flour
  • 1 lemon (juice and zest)
  • 1 pinch whole sea salt
  • 5.3 oz milk kefir (thick like yogurt)
  • 1.8 oz raisins (Organic)

Steps for Many Apples and Kefir Cake

  • Soak the raisins. Wash and cut the apples into small pieces, drizzle with lemon juice and zest the lemon, cover the bowl.

    In a blender, pour the eggs and the pinch of salt and whip well. Add the tablespoons of flour and a teaspoon of baking powder. Blend a little and then pour everything over the apples.

    Rinse, drain, and squeeze the raisins and add them to the apples, also pour in the kefir, and give it a good mix again.

    Preheat the convection oven to 356 degrees Fahrenheit.

    Line a 9-inch round cake pan with parchment paper (without PFAS) and pour the batter.

    Bake for 45 minutes. Remove from oven, let cool, and enjoy.

Tips and Storage

The many apples and kefir cake will keep for a couple of days in the refrigerator. You can make the cake richer by placing the batter in a tart crust or puff pastry shell. You can use cranberries instead of raisins and further enrich the cake with chopped hazelnuts or almonds. Try it also with a couple of spoonfuls of cranberry compote mixed into the batter. If you don’t have or don’t like kefir, replace it with unsweetened yogurt. You can make the cake gluten-free by using sorghum, millet, quinoa, etc., flours.
