With a bit of leftover cooked millet, you can prepare a satisfying gluten-free treat, the millet and hazelnut cake. So after the chicory millet loaf here’s the sweet version.
The millet has the peculiarity of having a very delicate flavor which pairs wonderfully with both savory and sweet.
Indeed, with millet you can prepare healthy treats, with few ingredients, in this case, I added an egg, but you can easily leave it out and mix the millet with jam, ricotta, or soy yogurt. The sweetness in this case is given by a three-ingredient cream, 100% hazelnut cream, cocoa, and malt (but it can be honey). Nothing else, then of course it is at your discretion to make it more or less sweet.
You can add dried fruits like dried apricots, raisins, plums, or even some chopped nuts, apples or dark chocolate.

Ingredients for Millet and Hazelnut Cake
- 3/4 cup millet, hulled (raw)
- 1 egg (organic cat. a)
- 4 tbsps hazelnut cream
- 2 tbsps rice malt (optional)
- 2 bunches red currants
- 1 pinch unrefined sea salt

Steps for Millet and Hazelnut Cake
In this recipe, I start with already cooked millet, but if you have raw millet, rinse it well, soak it for a few hours if you have time, then cook it in plenty of water for 25 minutes, checking.
Prepare the 3 ingredient cream as here:
Beat the egg, mix with millet and hazelnut cream, add a pinch of salt.
Pour into a baking dish lightly brushed with oil, level it, and bake for 30 minutes. Cut into cubes, decorate with a little more hazelnut cream, and add red currants or other fresh fruit.
Tips and Storage
You can store the millet and hazelnut cake in a closed container for a couple of days in the refrigerator. You can warm it up a bit before serving. As mentioned, you can add fruit compote or classic homemade hazelnut cream. Try the cake with seasonal fruits, like pears, peaches, or apricots.
