Oat Groats and Lentils One-Dish

Today a very simple recipe, oat groats and lentils one-dish — filling and light.

Oats, this super energy cereal, are the cereal known to be richest in protein. For convenience many of us use rolled oats—for porridge in the morning, in sweets, or in soups at night. But oat groats, so good and versatile, are often forgotten—probably because they take longer to cook, hence the use of flakes.

Today I will show you a very quick method to have oat groats ready in very little time.

The only thing to do is soak them the night before, but we already do that with legumes, right? So it’s easy to do the same with cereals: water, a little lemon juice or baking soda, and then in the pressure cooker cook the oat groats for 15 minutes the next morning.

If you don’t have a pressure cooker, no problem—the cooking time is simply longer, around 45 minutes.

Whole Grain Oats and Lentils One-Pot Dish

Ingredients — Oat Groats and Lentils

  • 1 1/4 cup oat groats (hulled)
  • 1 2/3 cups water
  • 1 tsp sea salt
  • 1 1/2 cups cooked lentils (stewed)
  • 1 1/4 cup peperonata (stewed peppers)

  • 1 Pressure cooker

Steps — Oat Groats and Lentils

  • The night before, rinse and soak the oat groats in plenty of water with a splash of lemon juice.

    The next morning, rinse well, put them in the pressure cooker, add the water and a pinch of salt.

    Close the cooker, turn the heat to high and when it starts to hiss lower the heat and cook for 15 minutes. Release the pressure, check the cooking, fluff the grains if needed — or if they are still a bit firm, close again and let the oats cool in the pot.

    Then use them as you prefer.

  • In this case I dressed them with a drizzle of olive oil and added the stewed lentils. I always make extra lentils and freeze them.

    I served the oat groats on a bed of peperonata and steamed baby carrots.

Storage, tips, variations

Cooked oat groats keep for 3 days in the refrigerator if well sealed. You can also freeze oat groats in single portions. Add your preferred vegetables or legumes before bringing the dish to the table. Add spices or fresh herbs to make the dish more appetizing.
