With this heat a quick coffee ice cream without an ice cream maker is ideal. There are three ingredients: coffee, cream (also plant-based), rice malt or another sweetener.

Ingredients

In this case I used traditional cream but you can prepare it with plant-based whipping cream as well.

  • 7 fl oz brewed coffee (about 3/4 cup)
  • 7 fl oz heavy whipping cream (can be replaced with plant-based whipping cream)
  • 3 tbsp rice malt syrup (or powdered brown cane sugar)
  • 2 tbsp dark chocolate (shavings)

Steps for Quick Coffee Ice Cream without an Ice Cream Maker

I prepared it with a Thermomix, but a powerful blender suitable for ice will also do.

  • Brew a 6-cup moka pot and then let the coffee cool. Pour it into ice cube trays and freeze.

    Also pour the cream into ice cube trays and freeze that as well.

    The next day, pour the coffee ice cubes into the blender or Thermomix and add either the powdered sugar or the rice malt syrup. Blend until it becomes a frozen cream. Add the cream cubes and mix until you have a nicely churned ice cream. Pour everything into a container and leave it in the freezer overnight. If you can, after placing it in the freezer stir the ice cream every 3 hours to prevent ice crystals from forming. Remove from the freezer 5 minutes before serving.

    Serve with dark chocolate shavings.

You can prepare the same ice cream using a frozen fruit smoothie instead of coffee. You can sprinkle chopped nuts instead of chocolate.
