Quinoa Patties with Gomasio, Pumpkin, and Spinach

Here are the quinoa patties with gomasio, pumpkin, and spinach that you glimpsed yesterday dipped in macro chickpea sauce.
Soft and tender patties that are loved by children too. The secret of these gluten-free patties is using gomasio instead of breadcrumbs both in the dough and for the coating.

Quinoa Patties with Gomasio

Patties that are prepared in twenty minutes if the cooked vegetables are already ready.
The quinoa is indeed a superfood that saves lunch very quickly, don’t you think?
Quinoa does not contain gluten, has a glycemic index of 53 and is therefore low, contains calcium and antioxidants, fiber, and minerals such as phosphorus, magnesium, iron, and zinc. But that’s not all: quinoa satiates, provides energy, improves metabolism, and keeps type 2 diabetes under control.

Ingredients for Quinoa Patties with Gomasio

  • 3 1/2 oz quinoa (Italian)
  • 7 oz water
  • 3 1/2 oz pumpkin (cooked)
  • 3 1/2 oz spinach, cooked, boiled (or beet greens)
  • 3 tbsps gomasio
  • 1 clove garlic
  • 3 tbsps extra virgin olive oil

Preparation of Quinoa Patties with Gomasio

  • Rinse the quinoa thoroughly with a fine-mesh strainer to remove the saponin.

    Transfer to a pot, add water and a pinch of salt, and cook for 15 minutes on low heat. Turn off the heat and let it swell for five minutes.

  • Transfer to a bowl, add the pumpkin, spinach, gomasio, thyme, and optionally 10 grams of psyllium.

    Form the patties by slightly pressing them and coat them with gomasio.

  • Sauté them in a pan with a drop of oil until golden.

    Serve with vegan sauce.

Tips and Storage

You can vary the type of vegetables according to the season. Store the quinoa patties with gomasio in the refrigerator for a couple of days at most, well-sealed. You can freeze your patties and take them out and reheat them as needed. If you don’t have gomasio, you can also coat them with oat flakes as shown here.
