Valentine’s Day, a very simple proposal: Artichoke Puff Pastry Letters. Serve them as an appetizer or finger food at a cocktail hour. These little pouches are very cute — you can slip into them whatever you prefer.
You can fill your little love letters with the vegetables you prefer, or even with a hummus, for example.
I sautéed the artichokes in a pan and I filled some letters with raspberries, just to make sure red wasn’t missing at the table.

Ingredients for artichoke puff pastry letters
You can fill all your little letters with artichokes or other vegetables, or some — as I did — with jam and raspberries.
- 1 roll puff pastry
- 3.5 oz artichokes (sautéed in a skillet)
- 1 tsp chia seeds
- 1 drop plant milk
- 2 tbsp jam
- 6 raspberries
How to make
Roll out the puff pastry and cut squares about 3 1/8 in x 3 1/8 in. From the scraps, cut out little hearts.
Fold three sides and seal them together as in the photos, and brush the center where the little heart will be placed.
Fill with sautéed artichokes or other cooked vegetables as you prefer.
For the sweet version, fill with one teaspoon (1 tsp) of jam and two halved raspberries.
Brush with plant milk and sprinkle with chia seeds. Bake for 15–20 minutes at 356°F until golden.

Tips from Timo & Lentils
Consume the artichoke puff pastry letters on the same day, or keep them in the refrigerator until the next day, although the puff pastry will tend to lose some of its crispness.
Instead of the little heart you can apply a small leaf or tiny flower, so they are perfect all year round.
