Salad baskets with agretti are a complete dish, complemented with chickpeas, hazelnuts, and aromatic herbs.
This is the season for agretti or monk’s beard as we call them here, sweet, delicate, and vibrant green tufts.
I love to prepare agretti just boiled and seasoned with oil and lemon, and if there are leftovers, they are excellent in salads as in this case.
Properties of agretti:
Agretti are rich in vitamin C, vitamin A, magnesium, potassium, and calcium. They are remineralizing and purifying.

Ingredients for Salad Baskets with Agretti
- 2 whole-grain flatbreads
- 4 cups mixed lettuce
- 1 cup cooked, boiled chickpeas
- 1 bunch cooked, boiled agretti
- 2 tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 pinch sea salt
- 10 whole peeled hazelnuts
- 1 teaspoon marjoram
Steps for Salad Baskets with Agretti
Prick the flatbreads with a fork and brush with extra virgin olive oil. Also brush some bowls that can hold the flatbreads like a basket. Place in an air fryer for 10 minutes at 356°F (180°C) or in a regular oven for the same time until they turn crispy. Let cool.

For cooking dried chickpeas see the legume cooking and soaking.
Meanwhile, wash the mixed greens well: escarole, arugula, Treviso radicchio, whatever you prefer. I added boiled chickpeas, boiled agretti, hazelnuts and dressed with oil and lemon, a pinch of salt and marjoram.
Like all salads, if they are dressed, it’s best to eat them quickly. If you have leftover flatbread basket, you can toast it. In the flatbread basket, you can put a mix of seasonal salad, like the winter detox salad with flowers or in summer farro salad with green beans and eggplant, or even spring field salad.
