Scrambled Oats

A new, super simple breakfast recipe, scrambled oats, to try immediately.

It originally started as a vegetarian recipe with eggs, but nothing prevents you from trying it in other variations. The two essential ingredients traditionally are eggs and rolled oats, which can be made into a sweet or savory breakfast.

Let’s say that if the granola sometimes is too crunchy and scrambled eggs alone a bit too soft, scrambled oats are a middle ground.

You can prepare it with oats without soaking, mixing them a few minutes with the egg and adding a pinch of cinnamon or half a mashed banana, then scramble it in a pan for a few minutes.

Okay, let’s say, it’s an oatmeal with egg, exactly… but of course in America, it went viral as if it were the breakfast of the century.

For us who are used to enjoying whole grains at breakfast, nothing new there, but for those approaching a protein-rich breakfast complete with whole grains, it might be a novelty.

Just make sure it doesn’t become a habit to eat eggs every morning, now that eggs have been cleared of cholesterol. Sometimes I read that there are people eating dozens of eggs a day, when two or three a week if you like them are more than enough. And also adding protein powder everywhere as if we’re all weightlifters. Maybe we’ll talk about proteins in the foods we eat and those scientific and medical sources say are necessary for health another time.

Let’s get back to us, and scrambled oats, enough chit-chat. Already with the first experiment, I made a variant since I had some porridge already ready (cooked the day before) I used that.

I promise that in a few days I’ll try the version with non-soaked oats and banana (jeez, but they put banana everywhere? Everything tastes like banana, then … can’t I change fruit? I think I’ll mix in some cooked apple and then let you know).

Then I completed the scrambled oats with 0% yogurt, kiwi, and pear (since it’s winter and there are Italian kiwis and pears), a teaspoon of blueberry compote, and almonds.

Ingredients for Scrambled Oats

  • 1/2 cup whole rolled oats
  • 1 egg (organic category A)
  • 1 pinch sea salt
  • 1 dash extra virgin olive oil
  • 1 kiwi (Italian)
  • 1 pear (Italian)
  • 1.5 oz 0% fat Greek yogurt
  • 1 tsp cranberry compote
  • 5 almonds (Italian)

Steps for Scrambled Oats

  • In a bowl, mix the egg with the oats and a pinch of salt. Lightly brush the pan where you will pour the mixture.

    Cook while stirring as if it were just scrambled eggs. Lightly brown and at the end, you should have a sort of crumble.

    Add the fruit, yogurt, compote, almonds, and enjoy your breakfast.

Tips

Of course, these egg preparations should be consumed immediately. You can skip the egg and turn it into a vegetable breakfast. Mix mashed banana, soy Greek yogurt, 20 g of plant-based drink, chia seeds, and flakes, and cook like that.

Some use only egg whites, but I wonder… what do they do with the yolks? Hmm.
