Have you ever tried the simple cashew cream? A delicious nut cream that you can keep in a jar for a few days. Ideal to spread on bread but also for filling desserts.

You can also mix fruit into the cream to make it even more versatile. It’s also ideal when you don’t want to use plant-based cream to fill desserts. With cashews it’s perfect, because when soaked and blended they create this delightful little cream with zero cholesterol.

Cashews are in fact rich in antioxidants and unsaturated fats; moreover, thanks to the presence of fiber and fats, they slow the absorption rate of sugars, so they are useful for everyone, especially for those with type 2 diabetes.

The oil in this recipe is used only to make the cream smoother. If the taste of coconut is not for you, try organic sesame oil.

Sesame oil is a natural anti-inflammatory and a natural antioxidant, very rich in minerals, B and E vitamins and is a natural antibacterial.

Sesame seeds also have a high content of fatty acids, especially Omega-3 and Omega-9, and are also recommended as a calcium supplement.

Remember to soak the cashews for the cream

  • 1 1/2 cup cashews
  • 1 tbsp rice malt syrup (or erythritol)
  • 2 tbsp coconut oil (or other vegetable oil)

How to prepare simple cashew cream

  • Remember to soak the cashews in water the night before or at least six hours in advance.

    Drain and rinse the cashews, put them in the blender together with the rice malt or other sweetener and the oil. Blend very well until you have a smooth cream. Use immediately or pour into a jar and close. Keep in the refrigerator for a few days.
