Simple Orange Hummus

in

A very dietary recipe, the simple orange hummus and very quick, to spread on whole wheat bread or to accompany, for example, some freshly blanched butcher’s broom sprouts.

Dietary recipe because usually in hummus a lot of fats like sesame or extra virgin oil and tahini are added.

In this case, the oil is just one tablespoon, ten grams and the ingredients are just chickpeas, orange juice, a pinch of salt and parsley at the end.

My orange was a blood orange, so the color of the hummus was nice and pink in the end, but if you use a blond orange it will be more similar to the original hummus.

You can use dried chickpeas as I usually do, and find all the instructions in this article on legume cooking, or use good organic canned chickpeas that contain only water.

Ingredients for Simple Orange Hummus

  • 14 oz cooked, boiled chickpeas
  • 1 blood orange
  • 1 tablespoon extra virgin olive oil
  • 1 pinch sea salt
  • 1 tablespoon lemon juice
  • 1 teaspoon parsley

Tools

  • 1 Immersion blender

Steps for Simple Orange Hummus

As mentioned, this hummus is without tahini and other fats, just because I wanted to keep it very light, not a sauce but a very simple cream that the taste of the orange makes delicious. If you want, if your orange is organic, you can also grate a little bit of the peel inside.

  • Pour the well-rinsed boiled chickpeas into the immersion blender cup. Add a pinch of salt, the tablespoon of oil and lemon, and half the juice of the orange. Start blending and check the consistency, then gradually add the remaining liquid.

When you have a nice smooth and soft cream, transfer it to a bowl, sprinkling with fresh parsley.

Storage, tips, variants

If you have leftover hummus, keep it closed for up to 4 days in a container in the refrigerator. Naturally, if you want to add tahini or other oil it is at your discretion, as you can add garlic to give it even more flavor.

You can prepare grapefruit or lime hummus to bring something different to the table.
