Sugar-free Oat Cups

Cute, indulgent and light, the sugar-free oat cups, ideal for breakfast or a snack.

Recipes with rolled oats have been trending online lately: some people blitz them, some knead them. Sometimes they honestly look like a mess; rolled oats almost raw can even irritate a sensitive intestine.

I also wonder why sugar, agave, honey or maple syrup must always be added everywhere. In this case there is banana — sweeter than all of those — so you don’t need sugar. I tried my very simple version with only two ingredients (banana and rolled oats) and it’s not bad, in fact it’s nice. If you’re not keen on banana, mix with apple butter. In this version I cooked them in an air fryer, but you can of course prepare them in the oven.

Ingredients for sugar-free oat cups

  • 7/8 cup rolled oats
  • 1/2 banana
  • 1 pinch salt
  • 1/2 cup Greek yogurt (soy)
  • 20 pcs raspberries

Steps for the sugar-free oat tartlets

Simply mash the banana well and mix thoroughly in a bowl with the rolled oats.

Lightly oil the tartlet molds and press the mixture with the back of a spoon up to the edges, as if making a shortcrust.

Bake in a convection oven at 356°F until golden, or in an air fryer at 356°F for 15 minutes.

Let cool, gently remove from the molds and fill with soy or fat-free Greek yogurt and fruit — in this case raspberries.

tips and variations

The rolled oat cups keep in the refrigerator for a couple of days. You can also remove them from the molds if you prefer to serve them on small plates. You can fill them with a vegan lemon cream. If you use apple purée you can also fill them with savory toppings, with a cashew cream or a hummus
