A very light recipe, the super simple orange hummus is quick to make and perfect to spread on whole-grain bread or to accompany, for example, briefly blanched butcher’s-broom sprouts.
Light recipe because normally in hummus you add quite a lot of fat such as sesame oil, extra virgin olive oil or tahini.
In this case the oil is only a single tablespoon (about 10 g) and the ingredients are only cooked chickpeas, orange juice, a pinch of salt and parsley at the end.
My orange was a Tarocco blood orange so the color of the hummus turned out nicely pinkish; if you use a blond/orange orange it will look more like the original hummus.
You can use dried chickpeas as I usually do — see all the instructions in this article on cooking legumes — or use good organic canned chickpeas that contain only water.

Steps for Super Simple Orange Hummus
As mentioned, this hummus has no tahini or extra fats because I wanted to keep it very light — not a sauce but a very simple cream where the orange flavor makes it delicious. If your orange is organic you can grate a little of the peel into it.
Pour the well-rinsed boiled chickpeas into the cup of the immersion blender. Add the pinch of salt, the tablespoon of oil and the tablespoon of lemon and half the orange juice. Start blending and check the texture, then slowly add the remaining liquid.
When you have a nice smooth, creamy texture, transfer to a bowl and sprinkle with fresh parsley.
Storage, tips, variations
If you have leftover hummus, keep it closed in the refrigerator for up to 4 days. Of course, if you want to add tahini or more oil that’s up to you; you can also add garlic to give it more flavor.
You can make grapefruit or lime hummus to bring something different to the table.
