Sweet Potato and Radicchio Flan

A very simple one-dish meal: sweet potato and radicchio flan, a slightly bitter-sweet dish perfect to bring to the table.

It only takes a few ingredients and the result is guaranteed.

Sweet potato is always present in my kitchen, while I often don’t buy regular potatoes.

Their nutritional properties differ a lot: sweet potatoes are slightly less caloric and contain beta-carotene (vitamin A), which regular potatoes do not.

Ingredients Sweet Potato and Radicchio Flan

  • 2 sweet potatoes (or yams)
  • 2 heads Treviso red radicchio IGP (late-harvest)
  • 3.5 oz light ricotta (or soy ricotta (about 1/2 cup))
  • 2 tbsp extra virgin olive oil
  • 1 tbsp aromatic herbs
  • 1 pinch sea salt
  • 4 tbsp breadcrumbs

Steps Sweet Potato and Radicchio Flan

  • Very simple flan — here we go. First, wash and chop the two heads of Treviso radicchio. In a pan, pour a drizzle of oil and add one chopped shallot and sauté until golden. Add the radicchio and cook for 15 minutes over low heat with a lid on. Set aside.

  • Sauté the radicchio in the pan

  • Steam the sweet potatoes

  • Pour a drizzle of oil into the baking dish,

  • Layer with ricotta, salt and aromatic herbs

  • Finally, sprinkle generously with breadcrumbs and place under the grill at 356°F for 15 minutes until golden.

Tips from Timo e Lenticchie

You can store the flan well covered for a couple of days in the refrigerator. You can replace the ricotta with soy ricotta, or another vegan spreadable cheese.
