Looking for a super quick treat that pleases everyone? Try these very crumbly hazelnut cookies with only 4 ingredients.
I had seen Erica Liverani’s recipe where they are called “bones to bite” with chocolate. However I was frightened by the amount of powdered sugar so I halved the quantities. I would have used even less but it’s necessary to keep the hazelnuts together, otherwise they all fall apart.
The four ingredients are, of course, hazelnuts, powdered sugar, egg whites and cocoa.
Very simple and quick to make, they are addictive. If you are looking for other cookies to give as gifts, take a look at these:

Ingredients
- 17.6 oz hazelnuts (peeled and toasted)
- 2 cups powdered sugar
- 5 tbsp unsweetened cocoa powder
- 2.5 large egg whites egg whites
Steps – Very crumbly hazelnut cookies
Place the hazelnuts in a bowl. Sift the powdered sugar and cocoa and add them to the hazelnuts. Mix well.
Pour the egg whites slowly while continuing to mix.
Turn the dough out onto parchment paper and spread it, placing another sheet of parchment paper on top. Roll or press it until it’s about the thickness of a hazelnut.
Remove the top sheet of parchment and dust again with powdered sugar, working in sections.
Let rest for one hour, cut into small squares and place on a clean sheet of parchment on a baking tray. Bake in a convection oven for 15 minutes at 338°F.
Let cool and package.
