This time I chose to only knead and do the first rise in the machine.

Ingredients for Whole Wheat Bread with Olives
- 4 cups flour (Mora by Agugiaro e Figna)
- 2 tbsp extra virgin olive oil
- 1 tsp rice malt
- 0.42 cup vegetable milk (warm)
- 1.1 cup water
- 2 tsp dry yeast
- 1 tsp sea salt
- 3.5 oz taggiasca olives

Preparation of Whole Wheat Bread with Olives
Pour the whole wheat flour, rice malt, oil, then the milk, and finally the water into the bread machine basket.
Give a light stir with a spatula.
Pour the dry yeast into the designated compartment and start the program 20 for dough and rising.
Pour the salt along the walls of the machine a few minutes after starting.
When the program is finished, turn the risen dough out onto a lightly floured work surface.
Gently roll it out into a rectangular shape, add the well-drained olives, roll the dough and portion it into 5 pieces with the scraper.
Shape the rolls as you prefer, round or oval, rounding off and sealing well underneath.
Place them on a baking tray, cover with plastic wrap, and let rise out of the air for a couple of hours.
Turn on the oven at 392°F (200°C) static, gently dust the rolls with flour, and make cuts with a blade.
Bake at 392°F (200°C) for about 30 minutes, let the rolls cool on a rack before serving at the table.
Tips for Whole Wheat Bread with Olives
You can keep the rolls more hydrated by placing a small pot of water at the bottom of the oven or spraying water on the oven walls when placing the tray in.
You can store the rolls cold in a paper bag placed inside a plastic one.
