- 2 artichokes (to be eaten raw)
- 10.5 oz mixed salad
- 1 oz Grana Padano DOP
- to taste extra virgin olive oil
- to taste salt
- 2 tsp apple cider vinegar
- 4 cups water
- 1 lemon

Procedure
The artichoke and Grana salad is an easy and quick recipe, yet very tasty. Below are tips and tricks for a flavorful, crunchy, and delicious dish.
First clean the artichokes, remove the tougher outer leaves following the instructions you find here on how to clean artichokes perfectly.
Now cut them in half, remove any inner choke, and let the artichokes soak in a bowl full of water with added lemon (or vinegar).
Now wash the salad in plenty of water and for a crunchier result, leave it to soak overnight in the refrigerator.
Once washed, drain the salad and remove excess water, season the salad with oil and salt to taste.
After preparing the salad, cut the artichokes into thin strips, and use a peeler to create Grana Padano petals.
Once ready, add to the seasoned salad, mix well, and serve on the plates.
