  • 1 veal shank (beef or ox)
  • 1 tablespoon breadcrumbs
  • 1 tablespoon extra virgin olive oil
  • to taste salt
  • to taste pepper

Procedure

Preparing delicious baked bone marrow is very easy, here are some tips to enjoy it as is or accompanied by a delicious beef tartare.

  • First, you need to buy a shank cut lengthwise from your trusted butcher. Unfortunately, due to the length and thickness of the shank, it is not possible to do this operation at home.

    If the butcher also sells you the meat, don’t worry, you can make a delicious braised beef.

    Put the marrow in a bowl with cold water and let it soak for 10 minutes so that the blood inside comes out.

  • If you want to make the dish more delicious, you can add a beef tartare or a knife-cut beef tartare.

    Prepare the meat and keep it in the fridge, it will be placed on the hot marrow just taken out of the oven.

  • Now that the marrow is ready, you just have to bake the two halves on a tray. Put them in a convection oven at 356°F for 15-20 minutes with the marrow side facing up.

    When there are 5 minutes left until the end of cooking, you can add breadcrumbs for a crunchy note.

    Place the baked marrow on the serving plate and finish with the beef meat.

    Your baked bone marrow is ready!

Plating advice:

You can serve the baked marrow with raw beef and mustard. It is eaten warm with a spoon, a real delight. The toasted bread gives a crunchiness to the soft and buttery marrow.

Wine pairing with baked marrow:

I recommend pairing this dish with a medium-bodied noble red wine. Thanks to its component, the red wine can balance the rich taste of the marrow. For example, you can serve it with a Trentino Schiava red wine or with the classic Barolo, Chianti, or Montepulciano.
