Procedure

To prepare crispy outside and soft inside nuggets, I recommend using chicken breast, this way the final result will be better. If you want to use chicken thighs or drumsticks, I recommend removing the skin and tendons for a softer result.

  • First, you need to cut the chicken into fairly uniform chunks, I recommend pieces that are 0.5 to 1 inch thick and 1 to 1.5 inches long.

    Make sure the thickness is as uniform as possible; otherwise, some thicker pieces might not cook perfectly in the center during baking.

  • After cutting the chicken into bites, proceed with the outer breading. First, roll them in flour so they are evenly covered all over the surface.

    I recommend dipping the bites a few at a time and not all at once to avoid removing the flour coating and ending up with a sticky, grainy batter separated from the chicken.
